Homemade organic chicken soup recipe

Choose organic and regenerative options when possible to minimize your exposure to chemicals and pesticides. Reducing these substances helps lower oxidative stress and inflammation in your body, which can contribute to various health challenges.

Give yourself 1 hour 15 minutes to 1 hour 35 minutes to prep and make this. The more you make it, the easier and quicker it becomes. The key ingredient is to be present with the process, enjoy it, and infuse as much love as you can into it! Have fun!

Ingredients:

  • 1 pack of 6 organic chicken thighs (with or without skin or bones)

  • 1 organic large onion

  • 4 organic carrots

  • 4 organic celery stalks

  • 3 organic garlic cloves

  • 1 tsp organic ground cumin

  • 1 tsp organic ground turmeric

  • 1.5 tsp organic ground coriander

  • 1 tbsp organic mixed herbs

  • 32 fl oz organic chicken broth (homemade or store-bought; Kettle & Fire is a good option - check the ingredients! Avoid added sugars, gums, natural flavorings, and ideally extracts too - but this can be hard to find. The best option is homemade stock but that requires more time and planning.)

  • Small jug of filtered water

  • Avocado oil

  • For the finishing touch: organic probiotic plain yogurt, basil seeds, and cilantro

Instructions:

  1. Gather all your ingredients on the counter - everything from the oil, spices, and herbs to the small jug of water.

  2. Dice the onion and set it aside.

  3. Wash and chop the carrots and celery into small pieces.

  4. Finely chop the garlic cloves.

  5. Heat the avocado oil in a cast iron Dutch oven or large saucepan over low to medium heat.

  6. Toast the cumin and coriander for a few minutes until fragrant.

  7. Add the onions and sweat them for 10-15 minutes, stirring occasionally to prevent browning, until softened. Add a splash of water if they begin to stick.

  8. Move the pan off the heat or reduce to very low heat. Create a space at the bottom and add the garlic, stirring for 15 seconds as you add it to prevent burning and turning bitter.

  9. Return the pan to the heat. Add the carrots and celery, and turmeric, mixing well to combine.

  10. Stir occasionally to prevent burning. If the mixture begins to stick, pour in a little water from your jug and stir to loosen.

  11. Continue stirring and cooking on a low heat for 10-15 minutes, adding small amounts of water if needed to prevent sticking.

  12. Add the 6 chicken thighs on top of the ingredient base. Season with sea salt (Celtic grey is excellent) and pepper, and sprinkle with mixed herbs. Pour in the 32 oz of chicken stock. Add a little more water if needed to ensure the chicken is covered. Keep the heat on low, cover, and cook slowly for 30-40 minutes. Check occasionally to make sure it's not bubbling too vigorously; you want a very gentle simmer with the surface breaking slightly.

  13. Check one of the chicken thighs with a fork; it should fall apart easily when fully cooked.

  14. Remove the chicken thighs from the pan and shred them into pieces using a fork, placing them on a separate plate. (Remove and discard skin and bones if your chicken thighs have them.)

  15. Using a hand blender, blend the soup until smooth, leaving out the chicken. Add a tsp of basil seeds if you’d like to.

  16. Add half of the torn chicken pieces back into the soup and blend until combined.

  17. When the soup is thick enough to your liking, add the remaining chicken pieces back in and heat through.

  18. Add a squeeze of lemon - this is the secret to balancing the flavors in your soup!

  19. Taste the soup and adjust the seasoning as needed.

  20. Serve with a sprinkle of basil seeds, a spoonful of probiotic unsweetened plain yogurt, and fresh cilantro.

  21. Celebrate your achievement of homemade soup! Serve, thank your food, and enjoy!
